I cannot reproduce this bug on Debian testing either; after I hit Enter
or double-click to select a completion in the menu, the cursor is after
the completed word. I have the following relevant packages installed:

Are you running GNOME? If so, the settings of input methods have been
known to disrupt the editor in GPS for some people; I suggest you look
into that.
