I posted this to gnat-chat but got no response so far. So I'll try a wider
audience....
I have troubles recompiling a Linux kernel after installing GNAT (3.10p,
but I had the same problem with older versions).
I identified that the installation of gnat replaces stddef.h with another
version which lacks (among others) the definition of wchar_t. I restored
the old version of stddef.h, but I got only a little bit further;
apparently, there are other .h inconsistencies.
Before I go chasing each of these, is there anybody who solved this and can
provide me with the full list of files to restore ?

Perhaps you shouldn't have installed GNAT on top of the existing gcc.
What I did was that I installed everything under /usr/local/gnat and
when I want to compile Ada programs I just modify the path and source
the env-vals script (can be easily done with shell alias/function).
This way it is easy to upgrade/remove GNAT without interfering the
regular gcc.
