The entire pasta and baking business needs to increase its fiber content, decrease its fast carbohydrates and fats. On this part, I am not kidding. McDonald's and other fast-food operations have started to see the effects of consumer resistance to unhealthy products. I write this to illustrate that short term a company and an industry can flourish with minimal R & D expenditures. However, either technological progress will result in very strong competitive pressures; or if the operation can be moved off-shore, it will leave. Fortunately for our local pizzerias, there products can not be made in India. Bob Robert C.
