The domain name itself is a completely independent "product".
What you want from your hosting company is probably:
a) Access to run your own network daemons.
b) A platform you also run "at home" or access to compile your
daemons locally.
c) A webserver running as a proxy in front of your own daemon - and
maybe also serving plain documents.
As long as you have access to run your own network daemons on the
server and to configure the proxy server, you shouldn't need root
access on the machine.

using Apache as the front end proxy server.
