Lack of sophisticated 3-D graphics for flight simulators wouldn't be a hindrence in my mind. If that's what you want to build you'll probably want some package that is specialized to the platform and problem domain anyway - which you could still do. Not to mention that should there be some sense of GtkAda being the "standard" then there would be incentives to build upon it & extend its capabilities.
