Well, I don't know about rocket ships, but for Mission Computers, Radar Systems, Digital Moving Maps, Helmet Mounted Displays, etc. Yes! That's exactly what systems are using. The current flavour of the year seems to be PowerPC 750/7400 boards with some NOVRAM, ethernet, rs232 etc. see http://www.dy4.com for examples of such SBCs.
